Hi Again! Keep getting asked for some recipes and people always commenting on how they love my sausage....so here is that one. Not sure where it came from but I have made a few change along the way.

Vegan Sausages
They work great for sausage and peppers, pizza and cooked on the grill (just keep them away from the colon rotting burgers!). These are easy to make and taste way better than anything I can get at the store (Yves). The texture will remind you of sausage, and I was able to grill them after the steaming. This makes me think there is nothing these sausages can't do, a 50 miler maybe? I went crazy with the spicing: fennel, rosemary, sage, thyme, basil, oregano, parsley. Feel free to throw in whatever you want. I always doubled the recipe and make 12 and freeze the ones i am not using right away.
INGREDIENTS
- 1/2 cup pinto beans, rinsed and drained
- 1 cup cold vegetable broth
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, very finely minced
- 1 1/4 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1 1/2 teaspoons fennel seed, crushed
- 1 teaspoon red pepper flakes
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- Several dashes fresh black pepper
METHOD
1. Before mixing your ingredients, get your steaming apparatus ready. You know one of those basket steamers in a big pot.
2. Have ready 6 sheets of tin foil. In a large bowl, mash the pinto beans until no whole ones are left. Throw all the other ingredients together in the order listed and mix with a fork.
3. Divide dough into 6 even parts, I put 6 lumps on a cutting board and make sure they are all the same size.
4. Roll each lump into a 5 inch sausage, no comments necessary here! Wrap the dough in tin foil, like a tootsie roll. Don’t worry too much about shaping it, it will snap into shape while it’s steaming because this recipe is awesome.
5. Place wrapped sausages in steamer and steam for 40 minutes.
Now it can be eaten or further cooked with a recipe!!
